Around the holidays, I get a little sad from time to time. My family lives only about 4 hours away, but with work and life…it’s hard to get home as often as I’d like. One thing my family knows how to do is PARTY! During the holidays they really embrace the spirit of Las Posadas. They go to their friends’ parties, company parties, and they host a party at their home in Del Rio, TX.

The one thing that I really miss, of course, is all of the holiday Mexican food my family cooks during Las Posadas. Tamales, posole, hot chocolate, cabrito, and mole. For the longest time, I didn’t likes avocados, salsa, or mole. I had tried them when I was younger, but I just never had a taste for them.

When I came to college, I missed home so much that I started liking all of these things. Being in an apartment for the passed couple of years, it has been hard to cook the way my family does during the holidays.

I got a slow cooker a couple of weeks ago and I have been going CRAZY making different recipes I have found on Pinterest. Come to find out that you can make MOLE using a slow cooker! When I found this out I was ecstatic!!

Last year, my boyfriend and I decided to start having an annual posada at our place. This year it will be the last posada we have in an apartment before we move into a house. I want to make it an extra special holiday party because of this, so I decided to make mole for my first time for the party.

But, of course, I wanted to test it out first before then. I am so excited because it actually came out AMAZING!! And it is a super simple recipe that anyone could follow and make using a slow cooker.

SLOW COOKER RECIPE: CHICKEN MOLE

Ingredients:

4 – Boneless Skinless Chicken Breast
1 – Doña Maria Mole Sauce
1 – Carton of Chicken Broth

All the ingredients needed for this recipe can be found at HEB. =) All the ingredients were bought together and came out to under $20.

Directions:

  1. Scoop the Doña Maria Mole paste into your blender. Add 3 cups of chicken broth.
  2. Blend and check for no clumps.
  3. Add your chicken into the slow cooker. We used 4 frozen chicken breast.
  4. Pour the mole sauce over it and cover.
  5. Cook on High for 5-6 hours.
