Last year, my boyfriend and I decided to start having an annual posada at our place. This year it will be the last posada we have in an apartment before we move into a house. I want to make it an extra special holiday party because of this, so I decided to make mole for my first time for the party. But, of course, I wanted to test it out first before then. I am so excited because it actually came out AMAZING!! And it is a super simple recipe that anyone could follow and make using a slow cooker.

I also don't want to walk around looking like I just rolled out of bed. Any other weekend in Vegas, I probably wouldn't care. But, with the Latin Grammy's and the Cotto vs. Canelo fight, I don't know who I might see or even meet! Gotta stay looking on point!! These are some of the outfits I plan on wearing during my trip. Most I looked for on Pinterest. I have very little to no fashion sense, so I need to look at what others are wearing that I can easily mimic.
I am BEYOND excited! This will be my first girls' trip without my mom. My mom and I are super close and it makes me a little sad that I will be going on a girls' trip without her. I am excited to bond and to party with my girls though! 3 of the girls joining me are my sorority sisters and I also invited one of my friends from college. It will be interesting to see how both my worlds collide while we are on our vacation.
The taste of a frozen lemon pospsicle brings back memories of spending the night with all my cousins at my grandma's house. My grandma had a thing for bolis and paletas. For some reason she was always fully stocked when we arrived. She didn't offer actual food to us when we walked through her door. Instead she offered us sweet frozen goodness. That is one of the biggest memories my whole family has of her.
This past weekend, my mom, sister, and I headed to Cancun to celebrate my little sister's 18th birthday. We stayed at the Krystal Grand Punta Cancun and had the all-inclusive package. It was AMAZING, to say the least. We enjoyed amazing food and beverages all day, everyday we where there. The beach was beautiful despite all the seaweed that has accumulated over the past year there. The sand was still clean and white. The weather was a little cloudy and stormy when we arrived, but it cleared up by the second day we were there.
In July, my mom booked our trip to Cancun! She used the Southwest Vacations to book our flight and hotel together. Traveling to Mexico right now is pretty cheap and we snagged an amazing deal of $838.23 per person for flight and an all-inclusive hotel.
I am Mexican American. I am tired of being criticized for loving the United States, but for also embracing my Mexican heritage and traditions. I am in-between two worlds. It's something only a few can understand. Being 1st generation American you constantly feel like you don't know who you are because you love two very different cultures at the same time. And if you ever love one more than the other, at any instance, you feel like you are cheating on the other.
