Holy Mole! Celebrating Las Posadas!

Last year, my boyfriend and I decided to start having an annual posada at our place. This year it will be the last posada we have in an apartment before we move into a house. I want to make it an extra special holiday party because of this, so I decided to make mole for my first time for the party.

But, of course, I wanted to test it out first before then. I am so excited because it actually came out AMAZING!! And it is a super simple recipe that anyone could follow and make using a slow cooker.

Viva Las Vegas with The Nueva Latina: Part 2

I also don’t want to walk around looking like I just rolled out of bed. Any other weekend in Vegas, I probably wouldn’t care. But, with the Latin Grammy’s and the Cotto vs. Canelo fight, I don’t know who I might see or even meet! Gotta stay looking on point!!

These are some of the outfits I plan on wearing during my trip. Most I looked for on Pinterest. I have very little to no fashion sense, so I need to look at what others are wearing that I can easily mimic.

I am BEYOND excited! This will be my first girls’ trip without my mom. My mom and I are super close and it makes me a little sad that I will be going on a girls’ trip without her. I am excited to bond and to party with my girls though! 3 of the girls joining me are my sorority sisters and I also invited one of my friends from college. It will be interesting to see how both my worlds collide while we are on our vacation.

It’s something only a few can understand. Being 1st generation American you constantly feel like you don’t know who you are because you love two very different cultures at the same time. Dear Donald Trump: Thank You

As a Latina and a millennial, I realized how much POWER I have. Like my father, I am a Civil Engineer. I am active on social media. I also serve and hold officer positions on various volunteer boards, like both my parents. I have a blog where I can reach a broader audience on issues I find important. I have POWER to bring change through my work as an engineer and through my writing. When you go and make statements like the one you made about immigrants, it give me…us…the POWER to use it to bring consciousness on an issue that really needs to be resolved.
